The Search for the Best Kinalas in Town

            As more and more restaurants in Naga City are sprouting, carinderia businesses may be intimidated by the popular food chains that is quickly mushrooming, however, many are confidently staying in the market and continuing to flourish as yet more bicolanos prefer the taste of bicolano dishes cooked homemade style.

            As of today, there are many kinalasans in Naga City; one, along Diversion Road, tempting you with its name - Enting's Kinalas and another is Cely's Eatery in Barlin Street. These “kinalasans” are already known to many and attract crowds of people each day.

            But from what the team had seen and experienced, no other place can beat “kinalasans” along Barangay Dayangdang. This barangay even has more kinalas carinderias and eateries than other barangays with all their kinalasans added up. It was like getting stuffed in one kinalas carinderia, then after a few meters away another temptation for committing gluttony awaits- in the form of a kinalas-enticing us with its scent.

One will see several kinalasans and carinderias along the streets of Barangay Dayandang in Naga City.  Some famous kinalasans are:
            Wapak Kinalas, a carinderia which silently calls someone's attention to eat;
Cha Ced Kinalas, an eatery that may look rough on the outside but can soften knees with its cuisine of kinalas and other native dishes;
Ka Tonying's Kinalas Country, a carinderia installed beside its owner’s house which also serves tasteful Kinalas;
Ilyo Kinalas, a kinalasan owned and managed by Aurelio or “Manoy Elio” Amelano and his wife Helen. Many tricycles are parked in front of Ilyo Kinalas, which is proof enough that many people patronize their kinalas;
        Nonoy's Kinalas Baka, which serves kinalas under their home-feel nipa hut.
Tya Kamot serves one of best kinalas in town, found along Corregidor Street and well-known though a banner with its name is not to be found. It is actually known as Corregidor, not its actual name.

         So far, the most inviting is Kinalas Twin, still along Barangay Dayangdang. It is located at No. 32, Dayangdang Street, Brgy. Dayangdang, Naga City. Managed by Edwin Fullante Rey, Kinalas Twin is known to many people, from fitness-enthusiasts to policemen to casual diners. The video below shows different kinalasans along this area.

Inside a Kinalasan, one will see how a cook assembles the dish and serves it to the customers. After serving the dish, you will easily inhale the appetizing tang of kinalas. You can make a special concoction with siling labuyo, calamansi, and other condiments. To do this, begin grounding the siling labuyo with a special pestle. And then add it to your steaming bowl, slowly unfold the noodles with your spoon and blend it to the clotted brown sauce. Aaah, now at last, your kinalas is ready to heat up your starving stomach.

            Savor the hot broth full of pure meat flavor while tasting the luscious meat pieces and the different taste of onion chives. Another sip from the stock cube and you will taste the flavorful smack of your concoction –the mixing and blending tastes of calamansi and siling labuyo.
