Mr. Edwin Fullante Rey, owner of a kinalasan in Brgy. Dayangdang, willingly granted the team an interview about how he manages his kinalas carinderia against all odds.
Mr. Edwin tells us that his business had been doing well since he opened Kinalas Twin in 1992. "I chose the business of kinalas since there are many kinalas eateries here in Dayangdang and the dish is very popular in this area. Each day, I buy 70 kilos of fresh noodles, 30 kilos pork head, and 10 kilos lean meat. All these are consumed before we close every 6:00 p.m.; nothing is left, though sometimes those are not enough for one day!" he said.
We commented on the savory taste of the broth and asked Mr. Edwin his secret behind the taste of his broth, he just laughed and said, “There is nothing special about the broth, it is just boiled water. It is the sauce that gives my kinalas its peculiar taste”.
After a few prodding, Mr. Edwin revealed how he makes his sauce. “The brown-colored sauce is made up of ½ kilo garlic, 3 kilos flour, soy sauce, fat from the head of the pig, some salt and ground pepper.”
Mr. Edwin reveals that his kinalas secrets lie in the sauce and in the freshness of ingredients, "I make a very flavorful sauce and I make sure that every ingredient I use is fresh". He said.
When asked if he is threatened by the arousing and sprouting restaurants in the city and by some nearby kinalas eateries, he confidently answered no. “Why will I be threatened? I own this eatery and I have been in the business for almost 15 years. Kinalas Twin offers not only satisfying but also fresh kinalas at a very low price”, he added.
Mr. Edwin had said it right, prices at Kinalas Twin range only from PhP 23 to PhP 36 only.
Also, we were puzzled why the establishment was named "Kinalas Twin". Mr. Edwin said, "This establishment is named Kinalas Twin because I started the business with my twin brother Edgar F. Rey."
